Cincinnati Style Chocolate Chili (as pictured above)

1 onion, diced
1 lb ground beef
1/4 cup rich beef stock
4- 5 cloves garlic, minced
1 tblsp chili powder
1 tsp ancho chili powder
1 tsp cumin powder
1 1/4 tsp cinnamon
1/2 tsp cayenne pepper
1 1/4 tsp ground allspice
1 tsp salt ( to taste)
2 tblsp cocoa powder
1 can diced or crushed tomato
1 tsp ajinomoto
1 1/2 tblsp Worcestershire
1 tblsp apple cider vinegar
1 tblsp red wine vinegar
4 servings cooked spaghetti

optional garnish:
shredded cheddar cheese
diced shallot ( or onion,) soaked in 30% vinegar and water solution for 1/2 hour
kidney beans
sour creme

Cook the ground beef in a large pot, but do not brown.
Add onions and dry ingredients and mix well.
Add canned tomato, wooster, and vinegar.
Bring to a boil then reduce to a simmer for one and one half hours.
Serve over cooked spaghetti and garnished optionally with onion, kidney beans, cheddar cheese, sour creme.
