We marinated, seasoned, and smoked this pork shoulder over the Easter long weekend. The sweet and sticky fennel coating I came up with helped make this the best tasting pulled pork we’ve had yet… Enjoy the photos and recipe below!







Sweet and Sticky Fennel Marinade (as pictured above)

This is a sweet and sticky marinade for pork that will adhere during smoking. It has a moderate heat level.

2 tbslp olive oil
1 tblsp lime juice
3 tblsp brown sugar
1 tblsp Kashmiri chilli powder
2 tbslp paprika
1 tsp fennel seeds, coarsely ground
pinch of onion powder
pinch of garlic powder
1 tsp ajinomoto
1 tsp salt
1/2 tsp pepper

Stir all ingredients together and allow to sit for 30 minutes.

Please note that the ingredient amounts are approximate only. Use the photos above as a guideline for consistency. Add sugar to make the marinade stickier.
