Whole Grain Mustard (as shown)

1 1/2 cups yellow mustard seeds

1 1/2 cups brown mustard seeds

2 tblsp wasabi powder

4 1/2 cups cider vinegar

1 small bulb garlic, minced

1/3 cup honey to taste

approx 1 tblsp salt to taste

approx 1 tblsp dried thyme

Add mustard seeds and wasabi powder to a 2 quart jar. Add apple cider vinegar and allow the seeds to soak it up for at least 24 hours. Add thyme, honey, garlic and salt, and mix well. Let stand for a few hours before tasting. Adjust salt as necessary… if too bitter, add more honey. Blend to your desired consistency, we used a stick blender for 30 seconds or so to improve the texture. Allow to age for two weeks or so before using. Enjoy!
